Tohm Kha ( Coconut soup)

cooking kit includes:
- SimpliThai Tohm Kha cooking sauce
- 400 ml. coconut milk
- a handful of white mushrooms
- a few slices of lemongrass
- a few kaffir lime leafs
- a bunch of cilantro sprigs
- 1 red onion or shallot
you simply add:
your choice of (1½ cups) protein
some recommendations:
- chicken thighs
- chicken breast
- shrimp
- Tofu
- Vegetable ( Cabbage is preferred )
instructions:
prepare
- wash all vegetables
- 2½ cups potable water or your favorite broth
- 1½ cups meat (or protein substitute)
- 1 cup of the coconut milk
- cube red onions
- chop mushrooms
- chop cilantro
- tear kaffir lime leaf
- slice/chop lemongrass diagonally or smash it with back of knife
- chop/mince/crush Thai chili (optional)
let's cook!
- add water to medium-sized pot, bring to stove on [medium-high] heat
- add lemongrass, kaffir lime leaf, cilantro stems and add onion or shallot
- when it boils, add meat ( for shrimps & veggies skip to step 5, and add in the end with step 5 )
- bring to a boil again and let the boil roll until meat is cooked
- then add about coconut milk, mushrooms, and half the SimpliThai Tohm Kha Sauce; bring it to a boil once again
- adjust the flavor by adding more Tohm Kha sauce, and salt as needed.
- turn off stove, stir in chopped cilantro
